Pasta with mushroom
INGREDIENTS FOR 4 PEOPLE
■ 320 g pasta
■ 500 g mushrooms
■ 1 clove garlic
■ 1 small bunch parsley
■ 1/2 glass dry white wine
■ EV olive oil
■ salt & pepper
- Depending on the mushrooms used, clean the caps only or the stalks, cut into thick slices and place in a large pan with a little oil and the chopped garlic.
- Allow to brown, then add the wine; as soon as it has evaporated, season with salt and pepper. Lower the heat and continue to cook, uncovered, for about 15 minutes.
- When the pasta is al dente, add it to the mushrooms and the parsley, combining well.
Spaghetti with squash and bacon
INGREDIENTS FOR 4 PEOPLE
■ 320 g spaghetti
■ 150 g bacon
■ 250 g butternut squash
■ EV olive oil
■ pepper
■ salt
- Peel and trim a slice of butternut squash, and chop 250 g of the flesh. Wash well, then boil in salted water for 10 minutes. Drain and blend to obtain a smooth purée.
- Cut the bacon into strips and brown well in a non-stick pan without oil but with a clove of garlic. Then remove the garlic and add the squash purée to the pasta, mixing well.
- Add the crispy bacon and serve.
