It’s Christmas time: 3 recipes for your guests

Christmas is just around the corner. Have you already thought about what to cook for your guests? Here’s 3 recipes perfect for Christmas holidays.

 

  • Bolognese Lasagna: Prepare a vegetable soffritto (sautéed mix), add ground meat and brown it, deglaze with wine, and slowly cook the ragout with tomato purée.

Alternate layers of fresh egg pasta sheets, ragout, and besciamella (béchamel sauce).

Sprinkle with Parmesan cheese and bake until golden brown.

 

  • Ravioli in Capon Broth: Prepare a rich broth by slowly cooking a capon with vegetables and herbs.

Fill the ravioli (usually with meat filling) with your choice of mixture (meat, ricotta, etc.).

Cook the ravioli directly in the boiling broth and serve hot.

 

  • Ricotta and Spinach Cannelloni: Mix ricotta, cooked and squeezed spinach, Parmesan cheese, salt, and nutmeg.

Stuff the cannelloni (fresh or dry pasta tubes) with the ricotta and spinach mixture.

Arrange them in a baking dish with béchamel and tomato sauce, sprinkle with Parmesan, and bake in the oven.
